Hoi An
Hoi An is a must if you are planning on visiting Vietnam. It is such a charming city with gorgeous architecture, outstanding food, a thriving artist community, and locals who cherish tradition. Around every corner there is something demanding a photograph. The bad weather in Nha Trang meant an extra day in Hoi An and everyone was absolutely delighted. Here are some images that made me fall in love with Hoi An.


This is the local pagoda.

One thing I have been dying to do since I arrived in Vietnam was take a cooking class and learn how to make my favorite dish of all time, pho! I love this dish and ate it several times a week when I lived in DC. My local pho house was number 7 on my speed dial and Yung, the host with the most, knew what I wanted to the second he heard my voice on the other line. Here’s a big shout out to my pho posse! I can’t wait to wow you with my homemade pho. Woo!!! Lu and Andy, eat more pho with Sandy. Sandy, Col and Dan, give Yung a hug for me and tell him next time I see him I’ll be making the pho!
Not only did we learn how to make several mouthwatering dishes, we also had the opportunity to visit the organic market where our ingredients were grown. It was such an amazing experience.

Hoi An is also famous for their conical hats. We were each given a hat to wear as we walked through the farm and learned about the various herbs that would be used in our culinary masterpieces. Do I look Asian or what?

After we visited the farm, we headed to the market to buy our supplies.





Once we had all of our supplies in hand it was time to start cooking. I couldn’t wait to get started!
We made 4 dishes in total. To my girls and Andy, get pumped for supperclub b/c these meals are the bomb.
- Hanoi Beef and Rice Noodle Soup (insert applause)
- Lemongrass Shrimp Wrapped in Banana Leaves
- Slay Pot Fish with Fresh Dill
- Grilled Chicken and Banana Flower Salad
We didn’t use dried rice noodles either. No sir, we made them from scratch!
